This decadent and creamy blue cheese gnocchi recipe is a quick and easy weeknight dinner packed with flavor. Diced bacon, mushrooms, and spring onions are simmered in a rich cream and white wine sauce, then tossed with pillowy gnocchi and crumbly blue cheese.

  1. Cut bacon into little strips and then fry until crispy. Put aside to add back in later.
  2. Fry mushrooms in the butter and bacon juices for about 2 minutes.
  3. Add the garlic, spring onions, thyme and wine. Continue frying for about 4 minutes.
  4. Add the cream, stock and gnocchi and bring to light boil. Mix in the blue cheese and cook until the gnocchi is ready and the sauce reaches your desired consistency. Mix bacon back in.
  5. Serve with extra spring onions and or parmesan. Enjoy!

Notes

  • If the flavour is too strong or you want to thicken it a bit just add some more cream.
  • For a vegetarian option, simply omit the bacon.
  • Feel free to adjust the amount of blue cheese based on your desired level of pungency
