Spicy curry perfect for warming yourself up in winter.

  1. Cook onion, oil and curry paste together over a medium heat until onions soften.
  2. Add chicken and cook until sealed. Mixing while it cooks to ensure it cooks evenly.
  3. Once chicken is sealed add the rest of the ingredients and simmer until vegetables are cooked to your liking.
  4. Ensure chicken is cooked through before serving. You can serve with just the vegetables to be healthy if you used enough or you can serve on top of some rice.

Notes

  • We like to have ours with just broccolini as shown in the picture. The heads soak up the juice making it super tasty. Normally we also have it with some carrots.
