A classic New Zealand dessert featuring a crisp meringue shell with a soft, marshmallow-like center. Made with whipped egg whites and sugar, this Pavlova is flavored with vanilla and malt vinegar for the perfect texture. Ideally topped with fresh whipped cream and seasonal fruit.

  1. Heat oven to 180C. Line your baking tray with baking paper and grease it.
  2. Beat egg whites and salt until stiff, add water and gradually add sugar while still beating. Continue until straight peaks form.
  3. Reduce your beating speed to low and add in the vinegar, vanilla and cornflour.
  4. Put on the prepped tray in a beehive like shape. Reduce oven to 160C and bake for 30 minutes. Turn the oven off and let it rest in the oven for another hour.
  5. Top with whipped cream, passionfruit and fresh fruit, enjoy!

Notes

  • Easiest to use a stand mixer but an electric beater works just fine.
  • Regarding the peaks, don't give up on them!
  • Don't worry if it's crumbly and rubbish looking, thats what a good pavlova should look like.
