Fry the onion and garlic in the olive oil for about 2 minutes or until the onion turns slightly translucent. Cut the Chorizos in half and then into bits. Add to the onions and brown. Add the beef mince and mix.
Once the beef mince is browned add the paprika, curry powder, beef stock powder, chili, oregano leaves, parmesan and basil. Mix through and fry for roughly 2 minutes.
Add the tomatoes and red wine. Mix through and simmer. Simmer for about 1-2 hours with the top off and top up with water if it gets too dry (probably wont happen).
Serve on your choice of pasta with some cheese and basil sprinkled on top! Enjoy!
Notes
Can swap out the chorizo with bacon for a similarly rich flavor.
Love it over pasta with a stringy cheese like mozzarella.
